Preparation - 10 minutes
Cooking Time - 15-20 minutes
Servings - 2-3 people
Ingredients -
Penne Pasta - 2 cups
Water - 4-5 cups
Salt - 1/2 teaspoon
Oil - 1 teaspoon

For the vegetables and tempering -

Butter/oil - 1 tablespoon
Garlic - 1 tablespoon (finely chopped)
Onion - 1 medium (finely chopped)
Capsicum - 1/2 cup (chopped)
Sweetcorn - 2-3 tablespoons (boiled) - optional

For the mixed sauce -

Butter - 2 tablespoons
Flour - 2 tablespoons
Milk - 1.5 cups (cold)
Tomato puree/pasta sauce - 3-4 tablespoons
Tomato ketchup - 1 tablespoon
Cheese - 2 Cubes
Spices - Chili flakes (1 teaspoon)
Oregano/mixed herbs (1 teaspoon)
Black pepper powder (1/2 teaspoon)
Salt (to taste)

Method -

First, heat water in a large pot. When the water comes to a boil, add salt and 1 teaspoon of oil.
Now add the pasta and boil it over medium heat for 8-10 minutes.
The pasta should be cooked only 80% of the way. After this, drain the pasta and rinse it under cold water to prevent sticking.
Heat a teaspoon of butter or oil in a pan, add finely chopped garlic and sauté lightly.
Add the chopped onion, bell pepper, and corn, and sauté them over high heat for 2 minutes. Do not completely wilt the vegetables; they should retain their crunch.
Now, remove the vegetables to a plate and set them aside.
Then, add 2 tablespoons of butter to the same pan, add 2 tablespoons of flour, and fry over low heat for 1-2 minutes. Be careful not to brown the flour.

Slowly add milk, stirring constantly to prevent lumps. Cook until the sauce thickens.

Add tomato puree or pasta sauce and tomato ketchup to this white sauce. Then add chili flakes, oregano, black pepper, and salt.
Add the roasted vegetables and boiled pasta to the prepared sauce and mix well. Let it cook over low heat for 1-2 minutes so the pasta absorbs the sauce.
Finally, add grated cheese and stir until melted.
Serve the hot mixed sauce pasta with some more chili flakes and oregano.
