Sattu paratha recipe

Ingredients

For the dough

  • 2 cups whole wheat flour
  • Water as required
  • 1 teaspoon oil
  • Salt to taste

For the sattu stuffing

  • 1 cup sattu (roasted gram flour)
  • 1 medium onion, finely chopped
  • 2 green chillies, finely chopped
  • 1 tablespoon grated ginger
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon lemon juice
  • ½ teaspoon roasted cumin powder
  • ½ teaspoon ajwain (carom seeds)
  • Salt to taste
  • 2 to 3 tablespoons water

For cooking

  • Ghee or oil as required

 Method to prepare:

  • In a large mixing bowl, combine whole wheat flour and salt.
  • Add oil and gradually pour in water while kneading.
  • Cover with a damp cloth and allow it to rest for 20 minutes.
  • In another bowl, add sattu, chopped onion, green chillies, ginger and coriander leaves.
  • Mix in roasted cumin powder, ajwain, lemon juice and salt.
  • Sprinkle a few tablespoons of water and mix thoroughly.
  • Divide the dough into equal-sized balls.
  • Roll each ball into a small disc.
  • Place a generous amount of stuffing in the centre.
  • Gather the edges of the dough and bring them together to seal the stuffing inside.
  • Press gently and flatten slightly. Dust with flour before rolling.
  • Heat a tawa or flat pan over medium heat.
  • Place the rolled paratha on the hot surface.
  • Flip the paratha and apply a little ghee or oil.
  • Cook both sides until golden brown spots appear and the paratha turns crisp.
  • Remove from the pan and serve immediately.
