Keep these things in mind while kneading the dough
To make wheat flour bhature, the most important thing is to prepare the flour properly. Adding a little curd to the flour makes the bhatura soft and gives it a light yeast-like texture. Apart from this, adding one spoon of semolina makes Bhature crunchy and well puffed. While kneading the dough, keep it neither too hard nor too loose. Medium soft flour is considered best. After kneading, keep the dough covered for at least 2 to 3 hours, so that it can set well.

If you want the bhatura to rise as soon as it is put in oil, then you can add a little baking soda or baking powder to the flour. However, keep its quantity very less, because excessive use can affect the taste. While rolling Bhature, do not make it too thin or too thick. Bhaturas of medium thickness swell better and cook well from inside.
Oil temperature is most important
It is very important to have the right temperature of oil while making Bhature. If the oil is not hot enough, the bhaturas will absorb too much oil and will not become crunchy. Too much hot oil can burn the bhatura from outside. After putting the bhatura in the oil, press it gently with the help of a ladle. Due to this, it starts swelling quickly and its shape also becomes good.
