Instructions:

  1. Heat ghee in a pan and roast ragi flour on low heat until aromatic (4–5 minutes).
  2. Add cocoa powder and stir well.
  3. Add jaggery and cook until it melts and blends well with the flour.
  4. Turn off the heat, add cardamom and nuts.
  5. While still warm, shape into laddoos with greased palms.
  6. Cool and store in an airtight jar.

3. Coconut Jaggery Burfi

Ingredients:

  • 2 cups freshly grated coconut
  • 1 cup jaggery (grated or powdered)
  • 1 tsp cardamom powder
  • 1 tsp ghee

Instructions:

  1. Heat a pan with jaggery and 2 tbsp water to melt it.
  2. Add grated coconut and cardamom powder. Stir on low flame.
  3. Cook until the mixture thickens and leaves the sides of the pan.
  4. Grease a tray with ghee and spread the mixture evenly.
  5. Let it cool. Cut into squares and serve.

4. Sweet Potato Halwa

Ingredients:

  • 2 medium sweet potatoes
  • 1 tbsp ghee
  • 2 tbsp grated jaggery or honey
  • ½ tsp cardamom powder
  • Chopped almonds and pistachios for garnish

Instructions:

  1. Heat ghee in a non-stick pan. Add mashed sweet potatoes and sauté for 4–5 minutes.
  2. Add jaggery and mix well until it melts and blends.
  3. Sprinkle cardamom powder and mix again.
  4. Cook for another 2–3 minutes.
  5. Garnish with chopped nuts and serve warm.
