Sindhi Kadhi is formed in almost every Sindhi community. It is definitely formed when a guest comes or in marriage. You can easily make this delicious curry at home. This aromatic kadhi made of a lot of vegetables, gram flour, tamarind water and certain spices, in which the gram flour is roasted and cooked in its way, gives a unique experience of taste. The specialty of this Kadhi is also that you can add your favorite vegetables to it.

Sindhi Kadhi material

Gram flour: 4 table spoon, 8-10 guar pods, 5-6 ladyfingers, 1 drumsticks, 8-10 pieces cauliflower, 1-2 potatoes, 1/3 cup green peas, tomatoes: 1 (for paste), 1/2 teaspoon fenugreek seeds, 1/2 teaspoon rye, 3/4 teaspoon cumin, 3/4 teaspoon cumin, a fuck, 1/2 teaspoon, 1/2 teaspoon, 1/2 teaspoon, 1/2 teaspoon Red chili powder, 1/3 teaspoon garam masala, tamarind water: half a bowl, ginger paste: 1 table spoon, 5-6, curry leaves, 3 split green chillies, finely chopped green coriander, salt

How to make Sindhi Kadhi?

  • Wash all the vegetables thoroughly and cut it into large pieces. Soak tamarind pulp in a little water and extract tamarind juice. Gather all the spices in one place. Grind tomatoes and make a paste. Deep fry all the chopped vegetables and take out separately.
  • Put oil in the pan and heat it. Add fenugreek seeds, mustard, cumin, asafoetida to the hot oil and add tempering. Add curry leaves after 12-15 seconds. Now add gram flour and fry on medium flame while stirring continuously. Keep in mind that lumps do not fall in gram flour.
  • When the gram flour starts getting good fragrance and its color changes slightly, then add a little hot water to it. Now add turmeric powder, finely chopped ginger, red chili powder to the curry and mix well. Add more water as needed.
  • Now add green peas, salt and tomato paste to the curry and let it cook. Keep stirring the curry in between. When the curry starts getting a little thick, add all the deep fryed vegetables and split green chillies and let it cook for 7-8 minutes.
  • Now add garam masala and tamarind water and cook for 4-5 minutes. Open the lid and add finely chopped green coriander to the curry. Turn off the gas after 1 minute.
