In Assam, the first micro meal of the day is deeply rooted to the land. From fermented rice or poita bhat to tekeli pith, kholasapori peeth, xandoi guri made from the powdered rice, Assamese people just love to use this popular grain in myriad ways.
The Assamese breakfast, popularly known as jolpan, usually incorporates one slow-cooked dish or porridge and crepe coupled with raw ingredients directly brought from the backyard garden. Milk tea or red tea, jaggery, curd are also a part of jolpan depending upon the ingredients and mood. These food, made with pure heart, reflects the hospitality of the Assamese people.

Try these six Assamese traditional dishes as your breakfast for a change if you are too bored with modern dishes like bread toast or sandwiches in the morning.
1. Poita bhat recipe
The easiest breakfast for the Assamese people is poita bhat. You just need few ingredients – a bowl of leftover cooked rice kept in water or curd, few drops of mustard oil, a dash of lemon juice and chopped green chilies. For enhancing the taste you can use some mashed potatoes, boiled eggs or even a fish fry.
2. Doi sira xandoi
Next easiest breakfast on the list is doi, sira xandoi. For this you need doi or curd, sira means flattened rice, and gud or jaggery. First you have to soak and wash the flattened rice, take it in a bowl and mix with curd and jaggery. It’s ready. You can replace the flattened rice with puffed rice. Difference is you don’t have to wash it with water.
3. Xandoh guri porridge
Xandoh guri is basically fine powdered rice and roasted later which can be kept for many days. It is eaten by mixing with milk and jaggery.
4. Kholasapori pitha
They are easily made. All you have to prepare is rice powder batter. Mix chopped onions, or any other chopped vegetables like carrots, which is optional. Put mustard oil on a pan and heat it, spread the batter in circular motion, flip the both sides and let it cook. It’s ready.
5. Tekeli pitha recipe
Tekeli pitha is a rice flour cake. It can be plain or stuffed with jaggery and grated coconut, steamed and served hot. Serve it with a cup of hot red tea or milk tea.
6. Paani pitha recipe
Paani pitha is like a delicious crepe made with wheat or rice flour and onions. Combine it with a potato sabzi or with even honey to add a touch of sweet to your meal.
