Method (Spicy kakoda recipe)
1. First of all, wash and clean the caks thoroughly. Cut them longer from the middle or can also be cut into round slices. If the kakoda looks more bitter, then apply some salt and keep it for 10–15 minutes, then wash it.
2. Heat mustard oil in the pan. Add chopped kakodas and fry on medium flame till it turns golden brown. Take out the fried caks in a plate.
3. Add cumin seeds to the same oil. When the cumin seeds start crackling, add garlic and green chillies to it. Then add onion and fry till it becomes light golden. Now add turmeric, red chili, coriander powder and salt and fry the spices well.
4. Now put the fried cucumber in the spices and mix well. Cook on low flame for 5–7 minutes so that the spices get well. Finally add mango powder, mix and turn off the gas.
5. This pungent and spicy kakode vegetable looks extremely tasty with hot bread, paratha or dal-rice.
