Mexican rice recipe: Mexican rice which is often also known as Spanish rice. It has a special place in Mexican recipes. This delicious rice is cooked with tomatoes, onions, garlic and some special traditional spices. Its taste is mildly spicy. Its golden-red color looks quite beautiful. Mexican rice is often served like a side dish with Takos, Burito, or any Mexican dish. Its taste is liked by both children and elders. Fresh vegetables and spices used in it make it even more tasty and nutritious.
Its taste is slightly matched by Indian taste, so it is becoming increasingly popular in our India too.
Material
Basmati rice – 1 bowl (soaked 20 minutes in clean water)

Onion – 2
Salt – as per taste
Oil – 2 teaspoons
Tomato Puree – 2 Cups
Garlic – 6 buds (Make a paste or grate)
Sweet Corn – Half a cup (boiled)
Carrots – half cup (finely chopped)
Peas – A tablespoon cup (boil)
Tomato Sauce – 1 tbsp
Green Chilli – 2 (Finely chopped)
Red capsicum – 1 cup (finely chop)
Red chili powder – half a teaspoon
Coriander powder – half a teaspoon
Cumin – half a teaspoon
Lemon juice – 2 tablespoons
Green coriander – for garnish
Method
Boil water in a deep and thick pan. Now add soaked rice to this water and cook for about 70-80 percent. After cooking, filter the rice and keep it aside. Pay special attention to the fact that rice should not be cooked too much, otherwise it can break down.

Now heat the oil well in a pan or deep pan. Add cumin seeds to the hot oil and when it starts crackling, add finely chopped onion. Do not burn the onion too much, just fry till it becomes light golden. Now add garlic and green chili to the roasted onion and fry for a minute.
Now add carrots, peas, corn and capsicum to it. Fry them on medium flame for 4-5 minutes so that these ingredients become slightly soft but also keep its crisp.
Now add tomato puree. Add red chili powder, coriander powder and salt to it. Cook well for 7 -8 minutes or keep frying continuously until the spices start leaving the oil so that these materials do not get burnt. After this add tomato sauce and mix well so that the taste remains.
Now add boiled rice and mix slowly so that the rice does not break. Now mix this entire mixture well. After mixing, slowly slow down and push it and cook it for 5 minutes, by doing this, the taste of all the spices will be absorbed in rice.
Now turn off the gas and add lemon juice on top. To enhance its beauty, serve hot green coriander on top and serve hot.
