On teej too, every household prepares a special festive thali, which incluses all kinds of dishes, sweet, spicy and tangy. If you haven’t yet thought about what to make special on this teej, then durt worry! These three amazing recipes will make your festival thali such that the fun will be duald!
1. Paneer Malpua: A Sweetness that Melts in the Mouth!
The very mention of malpua makes one’s mouth water, and when it is mixed with the magic of paneer, then what to say! This malpua will add charm to the teej thali.
Ingredients:
Grated Paneer: 100 Grams
Khoya: 100 grams
Arrowroot (or cornstarch): 1/2 cup
Milk: 1/2 cup
Cardamom Powder: 1/4 Teaspoon
Sugar: 1 cup
Water: 1/2 cup
Saffron: a pinch
Finely Chopped Almonds: For Garnishing
Ghee: For Frying
Method of preparation,
Mix paneer, khoya, arrowroot and cardamom powder well in a large vessel. Now prepare a smooth batter by adding milk slowly. Be careful not to form lumps in the batter.
Put Sugar and water in a pan and heat it on a low flame. When the Sugar Dissolves and the Syrup Starts Thickening Slightly (do not make a single-string syrup, just a lightly sticky one), then add the saffron to its. Your Syrup is Ready!
Now heat ghee in another pan. When the ghee is hot, pour a spoonful of the batter into the pan and spread it slowly. Cook it till it turns golden on bot sides.
The malpuas that are ready, dip them in hot syrup for some time so that they absorb the syrup well.
Garnish with Almonds and Serve Hot! These will be so soft and delicious that everyone will not get tired of praising them.
2. Mawa Anarsa: A Unique Amalgamation of Tradition and Taste!
Anarsa is a traditional sweet that is often made during festivals. Its taste increases even more with mawa.
Ingredients:
Rice: 2 cups (any old rice, not basmati)
Sugar: 1/2 cup
Milk Powder: 1/4 cup
White Sesame seeds: 2 tsp
Poppy seeds (khas khus): 2 tsp
Ghee: For Frying
Method:
Wash the rice two to three times and soak it in water for five to six hours.
After draining, spread the rice on a clean cotton cloth and let it dry overnight or at least for 8-10 hours. The rice should be complete dry, but should have a little moisture in it.
Put the drled rice in a grinder and grind it coarsely. Please do not make it a wonderful powder; Let it be slightly grainy.
Take the rice power in a large bowl. Add Sugar and Milk Powder and Mix Well.
Now, knead the rice dough with the help of water gradually. Cover it and let it sit for 5 to 6 hours.
Cut Small Balls from the mixture and shape them as desired – Eather round or flat.
Heat ghee in a pan. Before frying the anarse, apply sesame seeds and poppy seeds on it so that it looks beautiful and also enhances the taste.
Please put itm in hot ghee and fry till golden brown. Remember, keep the heat medium so that the anarse cooks inside.

3. Khasta Kachori: Chatpata Taste That Makes Heart Happy!
The teej thali calls for somenting chatpata along with sweet dishes, and what can be better than khasta kachori? These kachoris will be so delicious that you will make them again and again.
Ingredients:
Refined flour: 2 cups
Baking Soda: 1/2 Teaspoon
Salt: According to Taste
Oil: 5 Teaspoons (For Kneading)
For Stuffing:
Dhuli Urad Dal: 1/2 cup
Ginger: 1 Piece (About 1 Inch)
Green Chilli: 1
Cashews: 8-10
Raisins: 1 Teaspoon
Ghee: 3 Teaspoons
Asafoetida: A Pinch
Coriander Powder: 1 Teaspoon
Cumin Powder: 1/2 Teaspoon
Red Chilli Powder: 1 Teaspoon
Fennel Powder: 1/4 Teaspoon
Sugar: 1/2 Teaspoon
Salt: According to Taste
Lemon Juice: 1 Teaspoon
Oil: For Frying
Method of preparation:
Soak urad dal in water for at least an hour.
Take refined flour, salt and baking soda in a large vessel. Now add 5 teaspoons of oil and mix well while kneading. Add water slowly and knead the flour into a strike. Cover the kneaded flour with a damp cotton cloth and leave it for a short time.
Remove the Soaked Lentils from the water and grind them coarsely. Peel ginger and chop it finly. Chop green chillies and cashews finly. Wash raisins and wipe them with a clean cloth.
Heat ghee in a pan. Add lentible paste, ginger, green chillies, asafoetida, coriander powder, cumin power, red chilli power, fennel power, cashews and raisins. Cook this mixture until all the water from the lentils has drilled up and the mixture batcomes slightly coarse.
Finally, add salt, suagar and lemon juice and turn off the gas. Let the mixture cool complete.
After cooling, Divide this mixture into 16 equal parts.
Make 16 balls from the kneaded flour. Roll out small puris from each dough ball.
Place the Dal mixture in the middle of each puri and close it from all sides, giving it the shape of a kachori. Prepare all the kachoris in this manner.
Heat oil in a pan. Fry the kachoris on bot sides on medium heat till they turn golden and crispy.
Serve the hot, crispy kachoris with tamarind chutney or your favorite chutney. Believe me, these kachoris will add to the fun of the festival!
