You might have heard of the Hammus of Classic Chole, but it is a refreshing and Indian taste option made of Tuvar dal. It is very easy to make a dip and can be served with roti, parathas, vegetables or any snack of your choice. So let’s start without any delay and see how this wonderful Tuvar dal hammus is made!
- 1 cup Tuvar Dal (Arhar Dal)
- 1/4 cup mole
- 2 Lamps Lemon juice (About 1 lemon)
- 2-3 Garlic buds
- 2 Lamps olive oil (You can use any oil of your choice)
- 1/2 Spoon cumin powder
- 1/4 Spoon chilli powder (As per taste)
- Salt In taste
- Water As required
- A little olive, oil, red chili powder, chopped green coriander To decorate
-
Step 1: Soaking Tuvar DalFirst of all, wash 1 cup of Tuvar dal thoroughly in a pot. After washing, add enough water to it and soak for at least 4-6 hours or overnight. Soaking will soften the lentils and cook it quickly.
-
Step 2: Boiling the lentilsWhen the lentils are well soaked, remove its water and put it in a pressure cooker or a heavy bottom pot. Add about 2 cups of water and a little salt to it and cook on medium flame. If you are using a pressure cooker, cook till 2-3 whistles. If you are cooking in the pot, boil the lentils for about 20-25 minutes until it becomes soft. Keep in mind that the lentils should be melted well.
-
Step 3: Frying SesameBy the time the lentils are boiling, we fry the sesame. Heat a pan on medium heat and add 1/4 cup sesame to it. Fry the sesame continuously and fry until it becomes light golden. Keep in mind that the mole burns very quickly, so fry them on low flame and keep stirring continuously. When the scent of roasted sesame starts coming, turn off the gas and let the sesame cool down.
-
Step 4: Tahinu (optional)If you already have Tahini (sesame paste), you can leave this step. But if not, then put roasted sesame in a mixer grinder and grind it finely. If needed while grinding, you can add a little olive oil. We need a smooth paste, which is called Tahini.
-
Step 5: Cooling the lentilsWhen the lentils boil, remove its excess water and let it cool slightly. Keep in mind that we do not have to cool the lentils completely, we will grind it only when it is light lukewarm.
-
Step 6: Grind HammusNow take a food processor or mixer grinder. Add boiled Tuvar dal, prepared tahini (or roasted ground sesame), lemon juice, garlic buds, olive oil, cumin powder, red chili powder and salt.
-
Step 7: Making smooth pasteGrind all the ingredients well. If the mixture looks very thick, then you can make a smooth paste by adding a little boiled lentil water or cold water. Keep in mind that we need a creamy and silky texture. Stop in between and mix the mixture from the edges of the jar so that everything is well grinded.
-
Step 8: Taste to taste and serveAfter the hammus is ready, taste it once. If you feel less salt or lemon juice, then you can add more to your choice. Now take it out in a serving bowl.
-
Step 9: DecorationSpread the prepared Tuvar dal hummus by adding a little olive oil. Then add a little red chili powder and finely chopped green coriander and decorate it. It will look even more attractive to see and the taste will also increase.
Some additional suggestions:
- Garlic taste: If you like the sharp taste of garlic, then you can use 3-4 buds. If you want light taste, then only 1-2 buds will be enough.
- Chilli volume: You can do more or less according to your choice of red chili powder. You can also use green chili paste.
- Oil choice: We have used olive oil, but you can also use any vegetable oil or sesame oil instead.
- Smothness: If you want a very smooth hummus, then you can also grind it by taking out lentils. However, peels also contain fiber which is good for health.
- Additional Taste: You can also add a little roasted cumin or coriander powder to it.
- Storage: You can store Tuvar Dal Hammus in airtight container and store it in the fridge for 3-4 days. Take out for a while before serving.
