  • 250 Gram Kand (Jimikand/Yam) Boiled and mashed
  • 2 Lamps Water chestnut flour or Rajgire flour (for fast) Or gram flour
  • 1 Green chilly Finely chopped (optional)
  • 1/2 Inch Ginger Grated
  • 2 Lamps Green coriander finely chopped
  • 1/4 spoon chilli powder (optional)
  • 1/4 spoon cumin powder
  • Rock salt In taste
  • Oil To fry
  1. First step: preparing tubersFirst, wash the tubers thoroughly. If you want, you can peel and boil it or boil it with peel and peel it later. I have boiled it with peel because it maintains its taste and nutrients.Take water in a vessel and put the tuber and boil it on medium flame. Boil it until it becomes soft. You can see it by piercing it with a knife or a fork. Usually, it takes 15–20 minutes.When the tuber boils, remove it from the water and let it cool slightly. When it remains light, take off it and mash it well. Keep in mind that there should be no big pieces in it.
  2. Second step: preparation of mixtureAdd a mashed tuber in a large bowl. Now add water chestnut flour or Rajgire flour (or gram flour), finely chopped green chillies (if adding), grated ginger, finely chopped green coriander, red chili powder (if adding), cumin powder and rock salt (or plain salt) as per taste.
  3. Mix all the ingredients well. You can use your hands so that all things become united. The mixture should neither be too wet nor too much dry. If the mixture looks slightly wet, you can add a little more flour.

  4. Third phase: copingNow lubricate your hands with a little oil. Take a little part of the mixture and place it on your palm and give it a round or flat shape. You can give them any shape as per your choice – small shells, tikki or long -sized fritters.
  5. Similarly, prepare the copy with all the mixture and keep it in a plate.

  6. Fourth phase: fryingHeat oil on medium flame in a pan or pan. The oil should be so much that the copy can easily drown in it. When the oil is well heated, add slowly prepared copper oil. Keep in mind that do not put too much copy at a time, otherwise the temperature of the oil will fall and the copy will not fry properly.
  7. Fry the copper on medium heat until golden brown. Keep turning them in between so that they are equally roasted from all sides. It can take about 3-4 minutes per batch.

  8. Fifth stage: servingWhen the copper turns golden brown, take them out of the oil and keep them on a tissue paper so that the excess oil is absorbed.Your delicious tubers are now ready! Serve them with hot green chutney, curd or your favorite sauce. You can serve them with Falahari chutney during fasting days.
  • If you do not have boiled tubers, you can boil it till 2-3 whistles in the pressure cooker.
  • While making the mixture, if you feel that it is very dry, you can add a little boiled and mashed potatoes to it.
  • You can change the amount of spices according to your taste.
  • If you are not making fasting, then you can also add a little chaat masala to it, which will make its taste even more spicy.
  • You can also fry these cups, but by deep frying it makes it more crispy.
  • You can also heat fried copy in the air fryer.
