It is important to add semolina to the dough; it gives crispiness and fluffiness to the bhatura. Adding curd makes the dough soft and also enhances the taste of the bhatura. The oil should be hot while frying; otherwise, the bhatura will absorb the oil and will not puff up. While rolling, apply a little oil on the dough; this will make rolling easier, and it will not stick. Adding wheat flour makes bhaturas a little healthier, and their texture is also good.

Why do bhaturas not puff up sometimes?
Often, people knead the dough too hard or too loosely, due to which the bhaturas do not puff up properly. Also, the temperature of the oil must be right. If the oil is cold, the bhaturas will shrink, and if it is too hot, they will burn from the top but will remain raw from the inside.
