Ingredients:
Boiled potatoes: 4-5
Tomatoes: 2 (finely chopped or pureed)
Green chilies: 2 (finely chopped)
Ginger: 1 inch (grated)
Cumin seeds: 1 tsp
Asafoetida: 1/2 tsp
Turmeric powder: 1/2 tsp
Red chili powder: 1 tsp
Coriander powder: 1 tsp
Garam masala: 1/2 tsp
Kasuri methi: 1 tsp (to taste)
Oil or ghee: 2 tbsp
Salt: to taste
Green coriander: for garnishing
Method:
First of all, peel the boiled potatoes and cut them into medium-sized pieces.
After this, heat oil or ghee in a pan. When the oil is hot, add cumin seeds and asafoetida to it.
As soon as the aroma of asafoetida comes, add green chilies and grated ginger and fry lightly.
Now add chopped tomatoes or tomato puree to it. Cook the tomatoes till they become soft and the oil starts separating.
After this, add turmeric, red chili, and coriander powder and mix well.
Then fry the spices on low flame for 1-2 minutes so that the rawness goes away.
Now add chopped potatoes and mix well with the spices. Add salt and fry for 2-3 minutes so that the flavor of the spices settles well in the potatoes.

If you like gravy vegetables, then add some water to it and let it boil. If you want to make a dry vegetable, then do not add water.
Now add garam masala and kasuri methi to it and mix well. After cooking for 1-2 minutes, turn off the gas.
Garnish by adding finely chopped green coriander on top.
Asafoetida potatoes taste very tasty with paratha, puri, roti, or rice.
