Ingredients:
- Bottle gourd (lauki) – 500g (peeled and grated)
- Brinjal – 1 medium (roasted and mashed)
- Roasted peanuts – ¼ cup (coarsely crushed)
- Onion – 2 (finely chopped)
- Tomato – 2 (finely chopped)
- Green chili – 2 (chopped)
- Ginger-garlic paste – 1 tsp
- Turmeric – ½ tsp
- Red chili powder – 1 tsp
- Coriander powder – 1 tsp
- Garam masala – ½ tsp
- Salt – to taste
- Oil – 2 tbsp
- Fresh coriander – for garnish
Method:
1. Cook the Lauki
Heat 1 tbsp oil in a pan. Add grated lauki and cook until all moisture evaporates and it turns soft.
2. Prepare the Masala
In another pan, heat remaining oil. Sauté onions until golden. Add ginger-garlic paste and cook till aromatic. Add tomatoes, green chili, turmeric, red chili, and coriander powder. Cook until oil separates.
3. Add the Smoky Twist
Mix in mashed roasted brinjal. Stir well to blend flavors.
4. Combine Lauki and Masala
Add cooked lauki to the masala. Mix thoroughly and cook on low flame for 4–5 minutes.
5. Finish with Crunch
Add crushed roasted peanuts. Stir gently. Sprinkle garam masala and garnish with fresh coriander.
Serving Suggestion:
Serve hot with roti, paratha, or bajra roti. The smoky brinjal and nutty peanut combo gives this bharta a rich, earthy flavor that’s hard to forget.
