Ingredients for making Tricolor Dhokla
Semolina – 1 cup
Curd – 1/2 cup
Water – as per requirement
Eno fruit salt – 1 tsp
Mustard seeds – 1 tsp
Green chillies – 2
Coriander leaves – 2 tbsp
Salt – as per taste
For the tricolor colour
Green part: Coriander paste or chopped coriander
White part: A Simple mixture of dhokla
Orange part: Carrot paste or grated carrot
Method
Now, let’s know the method of making Tricolor Dhokla. For that, add curd and salt to the semolina and make a thick paste. If needed, add water so that a thin solution is formed. Add Eno to the solution and mix it gently. Now divide the solution into three parts. In one, add some grated carrot and make its colour orange. In the second, add green coriander paste and give it a green colour, and leave the third as white.
After this, apply some oil in the steamer and first of all add the orange solution and keep it in the steam for 5 minutes. Then add the white batter and cook for 5 minutes. Finally, add a layer of green batter and cook for 10-12 minutes until the dhokla is cooked completely. Serve with mustard seeds, green chilies, and green coriander.

Method to make tricolor idlis

Idli batter (rice and urad dal batter) – 2 cups

For the tricolor color

Green part: Spinach paste or green coriander paste

Orange part: Carrot paste

White part: Same as batter

Method

You will easily find the batter for making idlis in the market. Now divide this batter into three parts. Mix spinach paste in one part and color it green. Add carrot paste in the second part and keep the third part white as it is. Now fill half the idli mold with orange mixture, pour white batter on top, and finally pour green batter. Cook in a steamer for 10-12 minutes. Serve hot tricolor idli with chutney and sambar. You can fry it and keep it.
