
1 cup dried white peas (white peas)
1 small onion, finely chopped
1 small tomato, chopped (optional)
2-3 green chillies, chopped
1 teaspoon ginger, grated
1 tbsp lemon juice
1 teaspoon chaat masala
½ tsp cumin powder
½ tsp red chili powder
4 teaspoons black salt
Taste salt
2 tablespoons fresh green coriander, chopped
Grated radish or carrot
Finely chopped onion
Green chutney or tamarind chutney
Kulche (purchased or homemade)
Butter or ghee
Wash white peas and soak them in enough water overnight or for at least 6-8 hours.
Cook them in a pressure cooker until about 3-4 whistles with a little salt and water, until it becomes soft, but until the pulp is not pulled.
When needed, remove the extra water and keep the ripe peas aside.
Add boiled peas to a mixing bowl or pan.
Add onion, green chillies, ginger, lemon juice, chaat masala, cumin powder, red chili powder, black salt and normal salt.
Mix well, mash the peas lightly to thicken the mixture.
Add chopped green coriander and mix again.
Add spices and lemon juice as per taste.
Heat a griddle or pan and if you want, heat the kulcha with a little butter or ghee.
You can also toast or microwave them as per your choice.
