
When it comes to reducing food waste, it's something we're all aware of. With the cost of living crisis affecting most of us across the UK and the colder months being just around the corner it's no wonder many of us are looking to cut costs.
One way to do this is to not just dispose of any leftover food, but instead make sure they get consumed within days, or to keep it in the freezer for when you do want to eat it. However, leftovers often have the taboo of being 'boring' and not as good as it was when it was first cooked, which makes people view it as less appealing.
To help, one food influencer and content creator named Maya, known online as 'fitgreenmind' has shared her simple way of turning leftover rice into a delicious dessert or snack. And you most likely already have the other ingredients for it in your kitchen.
Taking to Instagram, Maya, who has over 3.9 million followers on the platform, was seen holding a pot of boiled rice before revealing her plans of turning it into ice cream.
"Did you know you can turn your leftover rice into ice cream?" she said at the start of her video before she went on to share the simple recipe.
She went on to explain the process, starting by adding the leftover rice into a blender. In the caption of her video, she said that she used 300 grams of cooked sticky rice, but any cooked rice would work.
Maya then went on to add 300ml of milk, with her opting to use vanilla flavoured soya milk to add a slight vanilla flavour to the ice cream. But once again, any type of milk you have at home will work.
She then went on to add 70 grams of sugar and a pinch of salt before mixing it all up until she had a smooth mixture.
In a different bowl, she added 300ml of 'vegan whipping cream', which will be great if you want your ice cream to be vegan or dairy free. If not, normal whipping cream will work just as well. Make sure to whip this up with a whisk until soft peaks forms in the cream.
"Add the rice mix to the whipped cream and fold it in carefully until beautiful," Maya said as she was seen folding in the mixture with a spatula.
She then carefully poured the mixture into a larger container and freeze it overnight. The next day when you're ready to eat the ice cream, Maya recommends letting the ice cream thaw for a few minutes to make it easier to serve up.
"The moment of truth," she said as she scooped up the ice cream before dusting it with cinnamon.
Taking to the caption of the video, Maya explained: "It actually works and tastes REALLY GOOD (like rice pudding as ice cream)!"
Several viewers soon took to the comment section of the video to share their thoughts, with many being amazed at the simple recipe.
"I need to try this recipe RIGHT NOW," one person wrote. Another viewer said: "What a coincidence! i made rice pudding and was planning to freeze it because I've made too much. Now I see your recipe, I can try this."
"Interesting!! I bet it's delicious with a great texture," a third viewer said.
Someone else went on to say: "Awesome! My brain already wants to attempt this with brown/red/wild rice."
