Material (Ganesh Chaturthi Special, Rasmalai Modak Recipe)
To make cheese (chena):
- Full Cream Milk – 1 liter
- Lemon juice or white vinegar – 2 tablespoons
Rasmalai flavor milk:
- Full Cream Milk – 2 Cups
- Sugar-3-4 tablespoons
- Saffron threads (soaked in hot milk)-4-5
- Cardamom Powder – ½ tsp
- Chopped almonds (for garnishing)
- Modic mold
- A little ghee (to grease mold)

Method (Ganesh Chaturthi Special, Rasmalai Modak Recipe)
- Boil milk in a fugitive. When the milk boils, slow down the gas and gently add lemon juice to it. Milk will start bursting and water (they) will be separated.
- Now filter it in muslin cloth and wash it with cold water so that the sourness is removed. Make a bundle and press it a little and hang for 10–15 minutes so that all the water comes out.
- Take the dried chenna in a plate and mash it for 6–7 minutes, until it becomes smooth. Add 1-2 teaspoons of ground sugar and a little cardamom powder to it. Make the mixture fill in modak mold.
- Boil 2 cups of milk on medium heat and thicken a little. Add sugar, saffron and cardamom to it. When the milk becomes thick, turn off the gas and let it cool.
- Grease modak mold with a little ghee. Take a little mixture of chenna and fill it in the mold and press lightly and give the shape of modak. Prepare all modaks like this.
- Keep the prepared modak in a serving plate. Add thick rasmalai milk on top and garnish with chopped dry fruits. Cold and offer it or serve.
