  • Vermicelli: 1 cup (roasted or raw, anyone will run)
  • Onion: 1 (finely chopped)
  • Tomato: 1 (finely chopped)
  • Green chilly: 1-2 (finely chopped)
  • Rai (mustard seeds): Half a teaspoon
  • Curry leaf: 7-8 leaves
  • Turmeric Powder: Fourth teaspoon
  • Salt: To taste
  • Oil or Ghee: 1 tablespoon
  • Water: About 1.5 to 2 cups
  • Lemon juice: 1 tbsp
  • Green Coriander: For garnish (finely chopped)
  • Your favorite vegetables (optional): You can also add a little carrot, peas or capsicum.

How to create (step-by-step recipe)

  1. First step – Fry Sevai: If your sevai is raw, put it in a pan and fry it on low flame till it becomes golden. If there is already roasted sevai, take it out in a plate and keep it aside. (By roasting, upma is not sticky, but feeds).
  2. Preparation of early: Now heat oil or ghee in the same pan. When the oil is hot, add mustard seeds. As soon as the mustard starts crackling, add curry leaves and chopped green chillies and fry for a few seconds.
  3. Cook vegetables: Now add chopped onion and fry it till it becomes light pink. If you are adding other vegetables (carrots, peas), then add them to 2-3 minutes so that they become a little soft.
  4. Add spices: Now add chopped tomatoes, turmeric powder and salt. Cook it well until the tomato is soft.
  5. Add water: When the masala is cooked, add about one and a half to two cups of water in the pan and let it boil well.
  6. The right time to insert Sevai: As soon as the water comes to a boil, add roasted sevai to it and mix it well. Sleep the heat and cover the pan and let it cook for 2-3 minutes.
  7. Last touch: Try to remove the lid. When all the water dries up and cooking the sevai becomes soft, then turn off the gas. Now add lemon juice and chopped green coriander and mix it lightly.
