Material

Fresh leaves of drumstick – 1 cup (remove the stalk)
Besan – 1 cup
Rice flour – 2 tablespoons (to make pakoras crispy)
Green Chilli-1-2 (finely chopped)
Ginger – 1 teaspoon (grated)
Garlic-2-3 buds (finely chopped)
Onion – 1 (finely chopped)
Turmeric – 1/4 teaspoon
Red chili powder – 1/2 teaspoon
Celery – 1/2 teaspoon
Salt – as per taste
Water – as per need
Oil – to fry

Method

  1. Wash the drumstick leaves thoroughly and remove the stalk and finely chop the leaves.
  2. Add gram flour, rice flour, turmeric, chili powder, celery, salt to a large bowl. Add chopped green chillies, ginger, garlic, onion and drumstick leaves to it.
  3. Prepare a thick batter by adding some water. (Not too thin)
  4. Heat oil in a pan. When the oil becomes medium, take a little mixture with a hand or spoon and put it in the oil.
  5. Fry the pakoras until golden brown and crisp. Then take out the tissue paper so that the excess oil comes out. Serve with hot dumplings green chutney or tamarind sauce.
  6. If you want, you can also make pakoras in the air fryer so that oil is less used. Keep sharpness for children and give dumplings with tomato sauce or cheese dip – they will definitely like it.
