Kofa for:
- Boiled potatoes – 1
- Boiled carrots, beans, peas (finely chopped) – 2 cups
- Cornflower – 2 tablespoons
- Ala -Gulas Paste – 1 tsp
- Green Chilli Paste – 1 tsp
- Salt – To taste
- Hot spice – 1 tsp
- Cilantro – 1 tablespoon (finely chopped)
- Oil – to fry the coffee
For gravy:
- Onion – 1 (finely chopped)
- Tomato – 1 (by puree)
- Cashew – 3 to 3 (soaked with pasted)
- Ala -Galas Paste – 1 tablespoon
- Red chili – 2 tsp
- Come -cumin powder – 1 tsp
- Turmeric – 1 tsp
- Hot spice – 1 tsp
- Salt – To taste
- Sugar – 1 tsp (optional)
- Oil – 1 tablespoon
- Ghee – 1 tsp
- Cilantro – for decoration

- First of all, boiled potatoes, boiled vegetables, green chilli paste, ginger-garlic paste,
- Add cilantro, hot spices, salt and cornflower well.
- Prepare the mixture with small balls of this mixture.
- Fry these balls in hot oil until the golden color, and remove it in a plate.
- Heat oil and ghee in a pan and add finely chopped onion. Return until golden.
- Now add the ginger-garlic paste, turmeric, chili, coriander-cumin powder to it.
- Add tomato puree to the spices and return to the oil.
- Now add the soaked cashew paste and give the gravy a nice texture.
- Add salt, hot masala and a little sugar to the mixture.
- Add water to your liking and boil the gravy.
- Lightly leave the fried coffee in the prepared gravy and turn off the heat. Add cilantro on top and decorate.
- Veg Maratha is wonderful with hot tandoori bread, nan, paratha or plain rice.
