Method (Makhana tikki recipe)
- First of all, dry the makhanas (on low heat 2-3 minutes). Then when it cools down, grind them coarsely in the mixer.
- Mash the boiled potatoes well. Add mashed potatoes, ground makhane, water chestnut flour, green chillies, ginger, black pepper, rock salt and coriander in a large bowl.
- Mix all the things well until the tikki dow is ready. If the mixture looks slightly wet, then mix a little more makhana powder or flour.
- Make small shells with the prepared mixture and press it with palms and shape the tikki.
- Heat a little ghee or oil on the pan and roast the tikkis on medium flame till it becomes golden and crisp on both sides.
- Serve the hot makhana tikki with green coriander-udder chutney or fasting curd. If you want, serve by sprinkling pomegranate seeds or rock salt from above.
- Instead of deep frying the tikkis, do shallow fry or air fry so that it remains healthy. If the mixture looks more soft, then add some more makhana powder.
