News India Live, Digital Desk: Indian Chaat Recipe: To make Ragda Puri, first you have to prepare its ‘Ragda’. For this, soak white dried peas overnight. The next morning wash it, add some water and turmeric, salt and boil it in the cooker, until it melt well. After melting the peas, make it mash a little so that thickness comes. This is your base! If you want, you can add a little garam masala and mango powder.
Now how to assemble chaat?
- Complete: Ragda puri is usually used for round, crispy puri (which is used for water puri). Keep them in a plate or crush and spread them.
- Ragda: Put hot rubbing on the men.
- Sweet chutney: Put sour-sweet tamarind sauce on top of it. You can make it at home with tamarind and jaggery, or ready from the market.
- Green Chutney: Add fresh coriander, green chili and ginger chutney.
- Curd: Add thick and cold yogurt lipped over the top. If you beat the curd by adding some sugar, then the taste will be better.
- Save and onion: Add finely chopped onion and a lot of fine sev on top, which will enhance both its beauty and taste.
- Spice: Sprinkle a little chaat masala on top, you can also add roasted cumin powder.
- Coriander leaf: Finally garnish with fresh green coriander.
