(Method) Prepare the mushrooms: First of all, clean the mushrooms thoroughly with water and then cut them into small pieces as per your choice. Do not make very big pieces so that the sauce gets absorbed properly. Make the batter: In a large bowl, add flour, cornflour, Kashmiri red chilli powder, ginger-garlic paste, black pepper powder and a little salt. Now add little water to it and prepare a thick paste or solution, which easily sticks to the mushrooms. Be careful that the batter should not be too thin. Coat the mushrooms: Now mix the chopped mushrooms well in this batter, so that each mushroom gets a good layer of the batter. Fry the mushrooms: Heat oil in a pan. When the oil is heated on medium flame, carefully drop the battered mushroom pieces into the oil. Fry them until they become golden brown and crispy. After frying, take out the mushrooms on absorbent paper to remove excess oil. Prepare the gravy: Now leave some oil in the same pan and heat it. Add finely chopped garlic, ginger and green chillies and fry lightly. Fry the vegetables: Then add square chopped onion and capsicum and fry on high flame for 2-3 minutes. Do not soften the vegetables too much, they should retain their crunch. Mix the sauce: Now add soy sauce, chili sauce, tomato sauce and vinegar. Also add some black pepper and salt as required. Mix everything well and cook for 2 minutes. Thicken the gravy: Add the prepared cornflour slurry to the sauce and keep stirring continuously, so that there are no lumps. Cook the gravy until it becomes thick. If you want a little more gravy, you can increase the water and slurry. Add Mushrooms: Lastly, add the fried crispy mushrooms in the thick gravy and toss gently, so that all the mushrooms are coated well with the sauce. Serve: Garnish the hot Mushroom Manchurian with spring onions and serve immediately. Eating it with fried rice or noodles is something else entirely!
