Method (Boondi Laddu Recipe)

  1. Filter the gram flour and take it in a bowl. Prepare a smooth and thin batter by adding water little by little.
  2. If you want to add color, add it at this step.
  3. Add sugar and water in a pan and cook on medium flame. Keep stirring until one string syrup is formed.
  4. Add cardamom powder and saffron in it. Turn off the gas.
  5. Now heat ghee or oil in the pan. Pour the batter through a boondi strainer (or a ladle with thick holes) and fry round boondi. Fry them till they become light golden.
  6. Immediately add the fried hot boondi to the syrup and mix well. Cover and keep aside for 10-15 minutes so that the boondi absorbs the syrup.
  7. When the mixture is slightly cooled but slightly lukewarm, apply some ghee on your hands and make laddus of desired size. Apply chopped nuts on top.
