Jimikand Recipe: Making Jimikand (Suran/Ol) curry on the special occasion of Diwali is a traditional and auspicious tradition. Material (Jimikand Recipe)
- Jimikand (Suran/Ol) – 500 grams
- Mustard oil – 3-4 tbsp
- Asafoetida – 1 pinch
- Cumin – 1/2 teaspoon
- Onion – 1 (finely chopped)
- Garlic – 5-6 cloves (crushed)
- Ginger – 1 teaspoon (grated)
- Green chilli – 2 (finely chopped)
- Tomato – 2 (finely chopped)
- Turmeric powder – 1/2 teaspoon
- Red chilli powder – 1/2 teaspoon
- Coriander powder – 1 teaspoon
- Garam masala – 1/2 teaspoon
- Salt – as per taste
- Green coriander – for decoration
- Tamarind or lemon juice – 1 teaspoon

Method (Jimikand Recipe)
- First of all, apply oil on your hands and peel the Jimikand (it is sticky and itchy). Cut into small pieces.
- Boil water in a vessel, add some asafoetida, salt and one spoon lemon juice or tamarind juice. Add pieces of Jimikand in it and boil for 10-15 minutes. This will eliminate itching.
- Now add mustard oil in the pan and heat it well until its rawness goes away.
- Add asafoetida and cumin seeds in hot oil. Then add onion and fry until golden. Now add garlic, ginger and green chilli and fry.
- Add turmeric, coriander powder and red chilli powder. Fry the spices for 1-2 minutes. Then add tomatoes and cook the masala until the oil leaves.
- Now add boiled Jimikand pieces and mix well with the spices. Add salt and garam masala. Cook on low flame for 8-10 minutes so that the spices get properly absorbed into the Jimikand. If you want gravy then add some water.
- Add finely chopped coriander on top and serve hot Jimikand vegetable with puri, paratha or rice.
Tips (to avoid itching)
- Apply mustard oil on hands while cutting Jimikand.
- While boiling, add lemon juice or tamarind to the water.
- Boiling thoroughly eliminates itching completely.
- Applying tempering of asafoetida is also very beneficial.
