Crunchy Sweet Potato Pancakes

Ingredients – 1 sweet potato, 2 small carrots, 1 small onion, 1 green chilli, a little coriander, oil as required, 1 tsp salt, 1 tsp red chilli, 1/2 tsp turmeric, 1/2 tsp coriander powder, 1/2 tsp garam masala, 1/2 cup oats, 2 tsp all-purpose flour and 1 tsp cumin.

Recipe - Dry roast the oats for two-three minutes and cool them. After this grind in mixer jar. If you grate carrots and sweet potatoes. Cut the onion thinly and long. After this, finely chop green chillies and green coriander. Add oats powder to it. Add all the dry spices in it and mix it, now add flour, add a little water and mix until it gets a binding consistency. Now add oil in a pan. Pour one tablespoon of this batter into it and press it to give it a round shape. Bake on low flame until crispy from both the sides. Pancake is ready. You can serve this with coriander-mint chutney or tomato sauce.

Sweet Potato Sabudana Tikki

Ingredients – 3 sweet potatoes, 1/2 small bowl coarsely ground peanuts, 1 small bowl sago, 1 tsp green chilli paste, 1/2 tsp turmeric, 1/2 tsp grated ginger, rock salt as per taste, oil, green coriander, 1/2 tsp lemon juice.

Method of preparation – To make this, first of all wash and clean the sweet potato, cut it into small pieces and put it in the cooker for 1 whistle. Now take sago and wash and clean it. Add half water in it and keep it soaked for 3 to 4 hours. Now grate the sweet potato and add green chilli and ginger paste to it. Add salt, turmeric, lemon juice and finely chopped green coriander. Grind the peanuts coarsely and add it and sago. Mix it and make tikkis. Now heat oil in a pan and fry the tikkis on low flame until they turn golden. Eat it with your favorite chutney.
