Materials:
- Flour – 3 cups
- Warm milk – 1 cup
- Sugar – 2 tbsp
- Dry yeast – 2 tsp
- Salt – 1 tsp
- Butter or oil – 3 tbsp
- Warm water – as required
- Butter (for brushing) – little

- To prepare Ladi Pav, first take warm milk in a bowl, add sugar and dry yeast to it. Stir gently and cover for 10 minutes. When the yeast blooms and bubbles appear, it is ready.
- Add the flour, salt and active yeast mixture to a large bowl. Slowly add warm water or milk to it
- Knead soft dough. Then add butter and knead the dough for 10-12 minutes until it becomes elastic and smooth.
- Place the kneaded dough in an oiled bowl, cover it and leave it to rise in a warm place for about 1 to 1.5 hours. The dough is ready when it doubles in size.
- Press the puffed dough lightly with your hands to remove air bubbles. Then make small balls of the same size and place them together in a baking tray (with some distance apart).
- Cover the balls and let them rise again for 30-40 minutes in a warm place.
- Preheat the oven to 180°C and bake for 20-25 minutes or until the loaf is golden brown.
(If you don’t have an oven, you can preheat a thick bottomed pan with a lid and add a little salt and bake on gas.) - Immediately after baking, brush the top with melted butter and let the loaf cool for 10 minutes.
- If the yeast doesn’t bloom properly, the bread won’t be soft, so pay special attention to that step.
- The better the dough is mixed, the more luscious the loaves will be.
- Choose a warm, not hot, place to grow the leaves.
