Paneer Dosa Recipe
Ingredients:
Readymade dosa batter - as needed
Salt - to taste
Paneer - 1/2 to 1 cup (grated or in small pieces)
Onion - 1/2 (finely chopped)
Tomato - 1/2 (finely chopped)
Green chilies - 1-2 (finely chopped, to taste)
Coriander leaves - 1-2 tablespoons (finely chopped)
Oil/ghee - 1-2 tablespoons
Mustard seeds - 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Red chili powder - 1/2 teaspoon (to taste)
Coriander powder - 1 teaspoon
Garam masala or pav bhaji masala - 1/2 teaspoon
Salt - to taste

Method:
First, heat oil/ghee in a pan or wok.
If you prefer, add mustard seeds and let them crackle. Then add finely chopped onion and green chilies. Fry the onions until they turn light pink.

Add finely chopped tomatoes and cook until softened. Then add turmeric powder, red chili powder, coriander powder, garam masala/pav bhaji masala, and salt, mixing well.

Add grated or crumbled paneer and gently mix it with the spices for 1-2 minutes. Do not overcook, or the paneer may harden.

Add finely chopped coriander leaves, mix well, and turn off the heat. Your stuffing is ready.

Add salt to the dosa batter to taste, and add water to make the batter thin enough to make dosa.

Heat a non-stick pan or dosa tawa. Once the pan is hot, apply a little oil and wipe it lightly with a cloth or tissue paper.
Sprinkle a little water on the pan and wipe it immediately. This helps regulate the temperature.

Pour a ladle of batter onto the pan and spread it thinly using a gentle circular motion with the bottom of the ladle.
Keep the heat on medium while cooking. Drizzle a little oil or ghee on the edges and top of the dosa.
When the dosa starts to turn golden and crispy on the bottom, spread 2-3 tablespoons of the paneer stuffing in the center and fold it over.
Serve hot paneer dosa with coconut chutney and sambar.
