It is a traditional sweet mainly made in Jammu-Kashmir and Punjab. Saffron is especially used to make Kashmiri Phirni and the taste of cardamom in it creates a wonderful combination. Phirni is also made from rice and milk, but its taste is quite different from Kheer, because it is always served cold and if served in an earthen vessel, it gets a different taste.

Ingredients of Kesari Phirni

To make Phirni, you will need 100 grams i.e. approximately half cup rice, 1 liter full cream milk and 10 to 12 chopped pistachios, same number of cashews and 3 to 4 crushed green cardamoms. Apart from this, you will need 15-16 saffron threads and 75 grams i.e. 1/2 cup sugar for sweetness. You can also add more nuts as per your wish like almonds, walnuts. It is important to make these preparations

Talking about the preparations for making Phirni, you have to soak the rice beforehand. For this, pick and clean the rice thoroughly, wash it and keep it soaked for half an hour. Soak saffron threads in some lukewarm milk. After this, chop all the nuts also. When the rice gets wet, put it in the mixer and grind it coarsely.

How to make Kesar Phirni?

Put milk to boil in a pan and when it boils, add ground rice. Keep stirring it continuously every two minutes and cook on low flame, otherwise the rice will stick to the bottom and the taste of Phirni gets spoiled. Cook it until it thickens. After this, add saffron milk and sugar and mix. Now add cardamom powder, nuts and turn off the gas, but check that the sugar should dissolve well.

Put the phirni in an earthen pot and keep it in the fridge to cool and then serve it garnished with some pistachios. You can also make different types of Phirni like Almond Phirni, in this almonds are soaked, ground and crushed as well as added.
