Method (Gilki Pakora Recipe)
- Wash, peel the Gilki and cut it into round thin slices (about 1/4 inch thick).
- Add gram flour, rice flour, spices, ginger-garlic paste, green chilli and salt in a bowl. Now add water slowly and prepare a thick but smooth batter (as is usually done for pakodas).
- Heat oil in a pan. Keep the flame medium so that the pakodas become crunchy from outside and cooked well from inside.
- Dip each Gilki slice in the batter and fry in hot oil until golden and crisp.
- Take out the pakodas on kitchen paper to remove excess oil. Serve hot pakodas with green chutney or tamarind chutney.
