Dry Fruit Gajak Recipe: Winter season doubles the fun of eating and drinking, especially when it comes to things made from gajak, chikki and jaggery. These traditional sweets not only have taste but also provide rich nutrition. One of these is Dry Fruit Gajak. Its specialty is that the sesame and jaggery present in it provide warmth to the body, while cashews, almonds, pistachios and raisins increase energy and strength. Material (Dry Fruit Gajak Recipe)
- Sesame (white) – 1 cup
- Jaggery (grated) – 1 cup
- Desi Ghee – 1 tablespoon
- Cashews (chopped) – ¼ cup
- Almonds (chopped) – ¼ cup
- Pistachios (chopped) – 2 tbsp
- Raisins – 1 tablespoon
- Cardamom powder – ½ tsp

Method (Dry Fruit Gajak Recipe)
- First of all, put sesame seeds in a heavy bottom pan and fry on low flame for 3-4 minutes, until a light aroma starts coming out. Keep in mind that the sesame seeds should not burn, just turn light golden.
- In the same pan, add some ghee and lightly fry cashews, almonds and pistachios. Then take them out and keep them aside.
- Now add 1 tablespoon ghee in the pan and add grated jaggery in it. Melt the jaggery while stirring continuously on low flame.
- When the jaggery starts bubbling, test it by putting one drop in cold water. If it hardens and becomes hard pieces, then understand that the syrup is ready.
- Now add roasted sesame seeds, dry fruits, raisins and cardamom powder and mix quickly. Do this step quickly because jaggery hardens quickly.
- Pour the mixture on a greased plate or smooth surface and spread it with a rolling pin. Keep the thickness as per your choice. When the mixture is slightly hot, cut square or rectangular pieces with a knife.
- When it cools down, separate the Gajak pieces. Keep it in an airtight container. It remains crisp for 15–20 days.
