Step 1 – Clean the pan properly

First of all heat the pan well. Then turn off the gas and add some salt to the pan. Cut half an onion or potato and rub the pan thoroughly with it. This removes old oil, dust and rust. Then wipe clean with dry cloth.

Step 2 – Season the pan

Now put some oil or ghee on the pan and spread it all around. When the pan becomes slightly hot, turn off the gas and leave it like that. Do this process 2-3 times, this will make the surface of the pan smooth and the dosa will not stick.

Step 3 – Correct temperature before adding dosa

Before adding dosa, the pan should neither be too hot nor too cold. To check, add a few drops of water, if the water immediately sizzles and turns into steam, then the temperature is perfect. Now wipe the pan with light oil or onion and add the dosa.

Step 4 – Method of spreading dosa

Now take the batter in a ladle and pour it in the middle and spread it outwards by rotating it in a circular motion. If the batter is too thick, dilute it by adding some water, only then it will spread well. After spreading, add some oil on the edges and let it bake well.
In this way your perfect and crispy dosa will be ready.
