How to Store Amla for Long Time
Soaking in cold water: Wash Amla thoroughly. Put them in a vessel and fill it with cold water. Keep changing the water daily. In this way Amla can remain fresh for 7-8 days.
Storing in salt water: Add 1 teaspoon salt in a bowl of water, boil it and cool it. Dip the gooseberries in this salt water and keep it in an airtight jar. Due to this, Amla does not spoil for 2-3 weeks and its color also does not change.

How to store in refrigerator: Wash the gooseberries and dry them completely (no moisture remains). Wrap them in a paper bag or kitchen towel and then put them in a ziplock bag. Keep in the fruit section of the refrigerator. In this way Amla remains fresh for 15–20 days.
Making and storing Amla pulp or juice: Grind Amla and make pulp or juice. Fill it in an airtight container and keep it in the freezer. Pulp or juice can be used for 3–4 months.
