Chef Ranveer Brar’s advice on the right way to make tea

New Delhi: Renowned chef Ranveer Brar, known for his delicious dishes and food- stories, recently discussed the right way to make chai. He shared that he loves the tea made by his father the most, and this recipe is very special to him.

Ranveer told in the YouTube podcast ‘Ranveer Allahabadia Show’ that his father makes tea at home. Although he did not reveal the complete recipe, he did tell that his father adds milk twice in the tea. In summer they use fennel and in winter they use liquorice. Brar said that his grandmother believed that making tea in this manner would maintain the body’s balance, and so he still follows the method today.

He also said that the taste of tea is different for everyone. Even though the ingredients are the same, each person’s style and love makes it special. Dr. Amreen Sheikh, chief dietitian of KIMS Hospital, Thane, also agreed on this. He said that Indian traditional remedies are not just habits but a storehouse of knowledge. Dr Sheikh said that the use of liquorice and fennel has different effects on the body according to the season.


Benefits of liquorice in winter

According to Dr. Shaikh, liquorice is beneficial in winter as it is warming and soothing. It provides relief from cough, cold and sore throat and strengthens the respiratory system. At the same time, fennel provides coolness in summer, improves digestion, reduces acidity and gives freshness to the body. Therefore, using both of them according to the season is appropriate from Ayurvedic point of view.

Dr Shaikh further explained that liquorice gives the tea a thick and mildly sweet taste, which has a caramel-like flavour, while fennel gives the tea a light, aromatic and refreshing sweetness, which reduces the heaviness of milk.

He said that two cups of tea required only a quarter teaspoon (a pinch) of fennel or liquorice. Adding too much quantity may spoil the taste. Additionally, he warned that individuals with high blood pressure or kidney problems should limit their consumption of liquorice, as it can increase sodium levels.
