Material

  • Sweet potatoes (boiled) – 2 medium sized
  • Wheat flour – 1 to 1½ cups
  • Cumin – half teaspoon
  • Red chillies – half teaspoon
  • Turmeric – a pinch
  • Salt – as per taste
  • Coriander – 2 tbsp
  • Ghee or oil – for frying the parathas

  • For this, first peel the boiled sweet potato and mash it in a bowl. The softer the sweet potato, the softer the paratha.
  • Add cumin seeds, salt, chillies, turmeric and finely chopped coriander to this crushed mixture. You can also add some green chillies if you want.
  • Now slowly add wheat flour to this mixture and start kneading. Natural moisture in sweet potatoes
  • As it does not require much water. Make a soft but not sticky dough.
  • Cover the dough and let it rest for 10 minutes. This makes the parathas nicely round and soft.
  • Heat the pan. Make small balls of dough and roll them thin or medium thick.
  • Fry the paratha on a hot tawa from both sides. A little ghee or oil is added while frying and the taste is amazing.
    When it starts to smell nice and the paratha turns golden in color, it is ready. Serve it hot with curd, pickle, chutney or ghee.
  • Don’t knead the sweet potatoes when they are too hot, the dough becomes loose.
  • You can also add a pinch of jaggery if you like it sweet.
  • If eaten with ghee, parathas taste very homely and desi.
