New Delhi: Mysore Pak is one of the most iconic sweet dishes of Kerala. It is known for its rich, melt-in-the-mouth consistency and irresistible aroma of ghee in which it is prepared. Unlike the North Indian version, which is crumbly and hard, the Karnataka-style Mysore Pak is soft and dissolves into the mouth effortlessly with every bite.
Using high-quality besan or gram flour, pure ghee, and the correct consistency of sugar syrup is the key to making perfect Mysore Pak. How to make Mysore Pak
To make Karnataka-style Mysore Pak, you need just three main ingredients that are gram flour (besan), ghee, and sugar. The key to making perfect Mysore Pak is in using ghee in generous amounts and making the right consistency of sugar syrup, and cooking it till it gets a golden perfection.
Ingredients:
- 1 cup besan (gram flour)
- 2 cups sugar
- 1 cup water
- 1.5 cups ghee
- ½ cup oil (neutral-flavoured, helps in texture)
Instructions:
Prepare the besan
- In a pan, dry roast the besan on low heat for around 3-4 minutes until it starts giving aroma. Do not brown it in the process.
- Mix it with ½ cup melted ghee to make a smooth paste and keep it aside.
Make sugar syrup
- Take a deep pan, add sugar and water together.
- Boil this mixture until it reaches a one-string consistency. You can check this by stretching a drop of this mixture from your fingers and your threads.
Cooking the Mysore Pak
- Once the syrup is prepared, reduce the flame and slowly add the besan-ghee paste to it while stirring continuously to avoid the lumps.
- In another, heat the remaining ghee and oil together and slowly pour this mixture in batches into the besan-sugar mix, while stirring continuously.
- The mixture will begin to bubble and will get a thicker consistency.
- Keep stirring it until it separates from the pan and turns into a porous, golden mix.
Setting the Mysore Pak
- Once done, instantly pour this mixture into a greased tray and spread it evenly.
- Let the mixture cool for 10-15 minutes and then cut into square shapes.
- Allow the cut pieces to set completely before removing them.
