Ingredients (Serves 2-3)
1 cup semolina (rava)
1/2 cup millet flour
1 cup yogurt (slightly sour)
1/2 cup water (as needed)
1 teaspoon mustard seeds
1/2 teaspoon turmeric
6-7 curry leaves
1 small green chili (finely chopped)
A little grated ginger
Salt to taste
1/2 teaspoon Eno/baking soda
1 teaspoon oil (for tempering and greasing)

Easy Step-by-Step Recipe
Prepare the Perfect Rava and Millet Batter
In a bowl, combine the rava, millet flour, yogurt, and a little water to form a smooth batter. Let it sit for 10-15 minutes. This will make the idlis soft.

Now comes the magic of the tempering
Heat a teaspoon of oil in a small pan. Add the mustard seeds, curry leaves, ginger, and green chilies, and fry them briefly. Add this tempering to the batter. This gives the idlis a wonderful aroma and flavor.

The right consistency of the batter
If the batter seems too thick, add a little more water. It should neither be too thin nor too thick.

Fluff the batter
Prepare the idli stand. Add Eno/baking soda to the batter and mix lightly. Now pour the foamy batter into the molds.

Steam and ready
Cook in an idli cooker or steamer over medium heat for 10–12 minutes. Check with a toothpick – if it comes out clean, the idli is ready.

Serve to double the flavor.
Serve the Rava-Millet Idli with hot coconut chutney, mint chutney, or sambar. If desired, you can sprinkle a little Podhi masala on top. Even with less oil, it delivers so much flavor that it won't feel like a 'diet food' at all.
