RajasthanThe cuisine of Chi is a wonderful blend of colors, flavors and traditions. The hot climate there produces many unique varieties of vegetables, with besan being used extensively. There are many dishes made using gram flour like millet bread, dal-bati, gatte ki sabzi, ker-sangri etc. Carrying on the same tradition, today we are going to make Rajasthani Style Besan Palak Bhaji, a dish that is healthy, tangy, aromatic and quick to prepare with less ingredients.

Spinach contains iron, calcium, vitamin A, C and fiber to nourish the body, while gram flour gives the vegetable richness, flavor and a special Rajasthani touch. Specially used red chillies, garam masala, dry fenugreek and the balance of sweet-spicy flavors make this vegetable very tasty. This bhaji is more aromatic, spicier than normal spinach bhaji and tastes amazing with roti. You can make this vegetable as a daily meal, lunch, or anytime you want a simple-strong flavor.
Material
- 2 cups finely chopped spinach
- ½ cup gram flour
- 2 tablespoons of oil
- 1 tsp cumin seeds
- 1 teaspoon of rye
- 1 pinch asafoetida
- 1 medium onion (finely chopped)
- 1 tsp garlic paste
- 1 tsp ginger paste
- Finely chop 2 green chillies
- 1 tsp turmeric
- 1½ tsp red chillies
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tsp dry fenugreek seeds (kasoori methi)
- Salt to taste
- 1 to 1½ cups of water

- For this, first wash and cut spinach leaves.
- On the other hand, make a paste by mixing tomatoes, ginger, green chillies in a mixer bowl.
- Now add chopped spinach, turmeric, masala, salt, prepared paste and gram flour in a bowl and combine all the ingredients.
- Now heat oil in a pan and spread the prepared batter in it and make a spicy chili.
- Now roll the prepared chillies and make fine pieces.
- Put another pan on the heat and saute the chopped onion in it.
- Now add garlic paste, ginger paste and green chillies. Saute for 1 minute until mixture is fragrant.
- After this add turmeric, red chillies, coriander powder and salt. Add little water and saute for 30 seconds to avoid burning the spices.
- Finally add salt to taste and spinach chili pieces and switch off the heat.
- Hot Rajasthani style besan palak bhaji tastes amazing with hot chapatis, millet breads or sorghum breads.
