Tinde Ki Sabzi: Tinda is a small green vegetable which is mild and sweet in taste. It is easily digested and tastes very light. Tinda is not only tasty but is also beneficial for health because vitamins and fiber are found in good quantity in it. Tinde vegetable is very popular in home cooking. It is made with simple spices and tastes delicious with roti, paratha or rice.
- 500 Gram Tinde
- 1/2 cup Water
- 2 Green chilly finely chopped
- 2 Tomato finely chopped
- 2 tablespoons Oil
- 1/2 spoon turmeric powder
- 2 tablespoons green coriander finely chopped
- Salt according to taste
Step 1: Prepare Ingredients

First of all, keep all the ingredients for making vegetables at one place. Keep ready tinda, tomato, green chilli, green coriander, oil, turmeric, salt and water. This makes it easier to work and nothing gets left out.
Step 2: Wash and scrape the tines

Wash the tindas thoroughly and scrape off their skin. Scraping will help the tindas cook faster and enhance the flavor of the vegetable.
Step 3: Cut the Tindas

Cut the tindas into 4 pieces. If the sticks are big, they can be cut into 6 pieces. With this, the tindas in the vegetable will cook evenly.
Step 4: Chop green chillies and coriander

Finely chop green chillies and green coriander. Green chillies will add spiciness to the vegetable and coriander will add aroma.
Step 5: Cut Tomatoes

Cut the tomatoes into small pieces. This will add sourness and color to the vegetable.
Step 6: Fry Oil and Spices

Heat oil in a pan. Add green chilli and turmeric in oil. Fry it for 1 minute so that the flavor of the spices dissolves well in the oil.
Step 7: Add tinda and tomatoes

Now add tinda and fry lightly. Then add chopped tomatoes and add salt. Add 1 cup water, cover and cook on medium flame. You can add some more water if needed.
Step 8: Add coriander to the vegetable

When the tindas are cooked well and the water reduces, add green coriander on top.

Serve this hot tasty tinda vegetable with roti or rice.
- Before making tinda, wash it thoroughly and lightly scrape off the top skin. Due to this, the tindas cook quickly and remain soft.
- Always cut the tinda into equal sized pieces. When they are cut into small pieces, some get cooked quickly and some remain raw.
- Add green chillies and tomatoes only when the tindas are lightly roasted. With this, the flavor of the spices dissolves well in the tinda.
- Pay attention to the amount of water. Add less water in the beginning and if needed, you can add a little more later.
- Cook tindas on low flame. Cooking on high flame may cause the tindas to remain raw or the spices to burn.
- Finally add green coriander. This improves the aroma and color of the vegetable.
- Add salt and turmeric as per taste. The mild sweet taste of tinda tastes good even without much spice.
