Onions - 2 (finely chopped)
Tomatoes - 3 (pureed)
Cashews - 10-12 (soaked)
Ginger-garlic paste - 1 tablespoon
Red chili powder, turmeric, coriander powder, garam masala - to taste
Cream/Malai - 3 tablespoons
Oil or ghee - 2 tablespoons
Instructions:
Preparing the Koftas: First, mash the paneer and mix it well with the boiled potatoes, cornflour, salt, green chilies, and ginger. Now make small balls from this mixture and stuff them with cashews and raisins. Deep fry them in hot oil until golden brown and set aside.
Making the Gravy: Heat oil in a pan and sauté the onions until golden brown. Add the ginger-garlic paste and stir. Then add the tomato puree and spices and cook until the oil separates. Now add the cashew paste and cook for a while, then add water. Simmer the gravy over low heat until it thickens. Now add cream or malai (fresh cream) to make it richer and more flavorful. Finally, add the fried koftas to the hot gravy and garnish with fresh coriander leaves.
Serving suggestion: You can serve paneer kofta with roti, butter naan, tandoori roti, or jeera rice. The gravy is so delicious that everyone will love it.
