Method to make Moong Dal Halwa:
- First of all, soak one and a half cup moong dal in water overnight. In the morning, drain the water thoroughly from the lentils and grind it coarsely in a grinder.
- Now, heat ghee in a non-stick heavy pan and add two spoons of semolina and two spoons of gram flour.
- Halwa becomes grainy by adding semolina and gram flour. When both these ingredients turn red, add ground moong dal paste and stir well.
- Keep stirring the halwa on low flame for about 20 to 25 minutes. The raw smell of moong dal should go away completely.
- Now add milk to the dal mixture and cook until all the milk is absorbed by the dal. While adding milk, take care that there are no lumps in it.
- Now, take water in another pan and boil it. When it comes to a boil then add saffron in it.
- Now add cardamom powder along with saffron water to the moong dal mixture and mix them well.
- Now add ghee and sugar and stir well. Cook on low flame and keep stirring occasionally.
- The liquid should be absorbed and you will now see the ghee separating. Finally add chopped pistachios. Serve moong dal halwa hot.
