Select the right peas
Before storing, make sure that the peas are dark green, granular and hard, without blemishes. Very soft or yellow peas spoil quickly when stored. After removing them from the skin, wash the peas with clean water.

Put 2 things in hot water
Now heat water on gas and add one spoon salt and one spoon sugar in it. When the water becomes hot enough, add green peas in it, then switch off the gas. Keep adding peas for 2-3 minutes. With this trick, peas will never grow mold after storing them. Now on the other side, immediately take out the peas and put them in cold ice water, this locks the color, taste and nutrition of the peas.

Dry before airtight packing
After putting the peas in cold water, spread them on a clean cloth. Spread it well so that the water dries up and the moisture goes away. Leave the peas like this for 4-5 hours. It is very important to dry peas completely before storing them. If there is moisture, peas can get spoiled even in the freezer.

Now store in zip lock bag
Now fill the peas in an airtight container. Remove air from the bag and seal it, so that freezer burn does not occur. Keep in mind that instead of keeping peas in one big pack, store them in small portions. Due to this, there will be no need to repeatedly melt and freeze again. Keep peas in the freezer at a temperature of 18°C or lower. At this temperature peas easily remain fresh for 10–12 months. Whenever you want to use it, take it out from the freezer and add the peas directly to the vegetable, pulao or soup. There is no need to wash or melt again.
