To prepare it, gather 1 kg of grated black carrots, 2 cups of milk, 1 cup of sugar or jaggery, 2 to 3 tablespoons of desi ghee, half a cup of khoya (reduced milk solids), half a teaspoon of cardamom powder, along with cashews, almonds, and raisins. Begin by heating ghee in a pan and sautéing the grated carrots. Then, add milk and let it cook. Once it thickens, incorporate sugar, khoya, and the dried fruits. The halwa is ready when it releases a delightful aroma. This sweet treat is perfect for both health and flavor during winter. Give it a try at home!


Kalpana Sharma elaborates on the Rajasthani method for making black carrot halwa. Start with fresh, local black carrots, ensuring they are washed, peeled, and finely grated. Since black carrots are denser, fine grating is essential. Heat pure desi ghee in a heavy-bottomed pan. Once hot, add the grated carrots and sauté over medium heat, stirring continuously to eliminate the raw taste and enhance the fragrance.


Once the carrots soften slightly, pour in full-cream milk. Lower the heat and stir occasionally to prevent the milk from sticking. Black carrots require ample time to cook thoroughly. As the milk thickens and the carrots absorb it, add jaggery or sugar to taste, stirring continuously to avoid sticking.


After the sugar dissolves, mix in cardamom powder and a pinch of dry ginger powder to elevate the flavor. Next, add homemade khoya and sauté on low heat for 5 to 7 minutes. When the halwa begins to separate from the pan and the ghee is visible, fold in chopped cashews, almonds, and raisins. Turn off the heat and serve the warm, traditional Rajasthani black carrot halwa.
