Sweet Potato Rabdi
Sweet potato rabri is a special winter sweet. Milk, sweet potato, saffron and cardamom are added in abundance in it, making it rich in nutrients. This sweet is made by cooking boiled and mashed sweet potatoes with milk, sugar, cardamom and saffron. Sweet potatoes are a great option for those who care about their health.
How to make Sweet Potato Rabdi
Boil the sweet potatoes, peel them, mash them well or grate them. After this, boil milk in a heavy bottom pan and cook it till it becomes thick (like rabri). When cooked properly, add mashed sweet potatoes to condensed milk and mix well.

Add sugar (or jaggery), saffron and cardamom powder, stir well and cook for 3-4 minutes.

Turn off the gas and let the rabri cool down a bit, then keep it in the refrigerator.
serve
While serving, garnish with chopped almonds, pistachios and cashews and serve chilled.
