Rajasthani cuisine is known for its rich flavors and comforting dishes, and one of the most loved recipes is Rajasthani Kadhi Pakoda. This tangy, spiced yogurt-based curry with soft gram flour fritters (pakodas) is a true delight for dinner. The combination of crispy pakodas soaked in kadhi makes it hearty, wholesome, and irresistible.


Ingredients

For Kadhi

  • 2 cups yogurt (curd), slightly sour
  • 3 tbsp gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 2–3 dry red chilies
  • 1 tbsp ghee or oil
  • Salt to taste
  • 4–5 cups water

For Pakoda

  • 1 cup gram flour (besan)
  • 1 medium onion, finely chopped
  • 1–2 green chilies, chopped
  • Fresh coriander leaves, chopped
  • ½ tsp carom seeds (ajwain)
  • Salt to taste
  • Oil for deep frying

Method

Step 1: Prepare the Pakodas

  1. Mix gram flour, onion, green chilies, coriander leaves, ajwain, and salt in a bowl.
  2. Add water gradually to make a thick batter.
  3. Heat oil in a pan and drop spoonfuls of batter to fry golden pakodas.
  4. Drain on paper towels and keep aside.

Step 2: Make the Kadhi

  1. Whisk yogurt and gram flour together until smooth. Add turmeric, chili powder, coriander powder, and salt.
  2. Add water to make a thin mixture.
  3. Heat ghee/oil in a pan, add cumin seeds, dry red chilies, and let them splutter.
  4. Pour the yogurt mixture into the pan and stir continuously to avoid curdling.
  5. Let it simmer on low flame for 20–25 minutes until thick and aromatic.

Step 3: Combine

  • Add the fried pakodas into the simmering kadhi just before serving.
  • Garnish with fresh coriander leaves.

Serving Suggestion

Serve hot Rajasthani Kadhi Pakoda with steamed rice or jeera rice. It also pairs beautifully with chapati or bajra roti for a traditional Rajasthani touch.
