Renowned globally for its rich flavors, Italian cuisine features red sauce pasta, which has become particularly popular in India. The combination of tangy tomatoes, fragrant garlic, and a hint of spice makes this dish a standout.
Many believe that achieving restaurant-quality pasta at home is challenging, but with fresh ingredients and the right approach, it can be done in just a few minutes. Here’s a simple step-by-step guide to making your own red sauce pasta.
Ingredients
2 cups of pasta, water, and 1 teaspoon of salt
For the sauce: 4-5 ripe red tomatoes, 1 tablespoon finely chopped garlic, and 1 medium onion (finely chopped)
Spices: 1 teaspoon chili flakes, 1 teaspoon oregano or Italian herbs, ½ teaspoon black pepper powder, and salt to taste
Other: 2 tablespoons olive oil, 1 teaspoon butter, 2 teaspoons tomato ketchup, and a generous amount of mozzarella cheese.
Instructions
Begin by boiling 4-5 cups of water in a large pot. Once boiling, add salt and the pasta. Cook until the pasta is about 80-90% cooked, then reserve a cup of the pasta water and drain the rest. Rinse the pasta briefly with cold water to prevent sticking.
For the freshest flavor, prepare your tomato sauce from scratch. Score the tops of the tomatoes and immerse them in boiling water for 5 minutes. Peel and blend them into a smooth puree.
In a pan, heat olive oil and butter. Sauté the chopped garlic until golden, then add the onion and cook until softened. Incorporate the tomato puree and simmer until the oil begins to separate.
Once the sauce thickens, season with salt, black pepper, chili flakes, and oregano. Stir in the tomato ketchup to balance the flavors. Add the cooked pasta and reserved pasta water.
Allow the pasta to simmer with the sauce on low heat for 2 minutes. Top with grated cheese, cover, and let it sit for 1 minute to melt the cheese thoroughly.
