Material
Flour – 2 cups
Ghee – 3 tbsp (for moyan)
Salt – a pinch
Water – as per need
Mawa (khoya) – 1 cup
Powdered sugar – ½ cup
Cashews – 2 tbsp (finely chopped)
Almonds – 2 tbsp (finely chopped)
Pistachios – 1 tablespoon
Cardamom powder – ½ tsp
Raisins – 1 tablespoon
Ghee or refined oil – enough
Sugar – 1 cup
Water – ½ cup
Saffron – a few threads
Cardamom powder – ¼ tsp
Method
- First of all mix flour, salt and ghee. Set the Moyan well by kneading it with your fingers. Now add water little by little and knead the dough tightly. Cover and let rest for 20 minutes.
- Lightly fry the mawa in a pan on low flame till the aroma comes out but the color does not change. Turn off the gas and when it cools down, add sugar, dry fruits and cardamom.
- Make small balls of dough. Roll out lightly, fill mawa in the middle and make a bundle and press it gently. Do not roll too much, otherwise the kachori may burst.
- Heat ghee/oil on medium to low flame. Add kachoris and fry on low flame until golden and crispy. This is the second big trick – low flame.
- Make 1-string syrup by boiling sugar and water. Add saffron and cardamom. Dip the fried hot kachoris in the syrup for 1-2 minutes and take them out. Your Mawa Kachoris are ready.
