Ingredients needed to make Gulgula
- 1 cup wheat flour
- Half cup jaggery (or sugar/brown sugar as per taste)
- 1 tsp fennel
- a pinch of cardamom powder
- half teaspoon baking soda
- water as per need
- oil or ghee for frying
How to make Gulgula
prepare jaggery solution
First of all, heat some water in a pan and add jaggery to it and let it dissolve well. Keep in mind that there should not be any grains in the jaggery. After this, keep the solution to cool.
prepare the batter
Take wheat flour in a big bowl. Now prepare a thick solution by slowly adding jaggery and water.
The batter should be thick enough to hold its shape when poured with a spoon, but not too hard.
add flavoring spices
Now add fennel, cardamom powder and baking soda to this solution.
Keep the batter covered for 10-15 minutes, this will make the dumplings puffy and soft.
frying process
Heat oil or ghee in a pan on medium flame. When the oil gets heated well, reduce the flame. With the help of a spoon, pour the batter little by little into the oil. The dumplings will automatically start taking a round shape. Fry them till they turn golden brown. After frying, take it out on tissue paper to remove excess oil. Now your delicious Gulgulas are ready to serve.
Special tips to make perfect Gulgula
- The solution should neither be too thin nor too thick.
- The oil should not be too hot, otherwise the dumplings may burn from outside and remain raw from inside.
- Grated banana can be added to the batter to enhance the taste.
- Brown sugar can also be used instead of jaggery.
