In Rajasthan, Malpua is served with Rabdi. Which looks quite tasty to eat. Everyone likes its rich flavor. To make this, prepare a batter by mixing khoya, milk, cardamom and fennel powder in flour. After this, take a pan and heat ghee in it. Keep in mind that Malpua should always be fried in ghee and not in oil or refined oil. Take a deep ladle and put the balls in ghee in round shape and fry them. When it turns golden color, take it out and keep it aside. You also have to prepare string syrup. Dip the fried Malpua in syrup and then sprinkle rabri on top and serve.

Bihar Malpua Recipe
Malpua is made in a very different way in Bihar. Here bananas are used to make it. To make Bihari Malupaa, mash ripe bananas well. After this, prepare the batter by mixing milk with flour, khoya, jaggery or powdered sugar, cardamom and fennel powder in a vessel. Now heat ghee in the pan and pour the batter into the ghee with the help of a ladle. Fry until golden. Bihari Malpua is eaten without sugar syrup. But if you want, you can also serve it in syrup.

Recipe of Mathura's special Malpua
A different color of Holi is seen in Mathura, the city of Shri Krishna. Holi is played here in different ways. At the same time, the style of making Malpua is also different. In Mathura, Malpua is made by mixing flour and semolina. For this, first of all take a vessel and mix 1 flour and 2 tablespoons of semolina in it. After this, prepare the batter by adding cardamom powder and milk. Now to make syrup, boil ¾ cup sugar and ½ cup water. Use ghee to fry Malpua. After it turns golden brown, take it out, soak it in syrup and serve.
Malpua Recipe of Odisha
In Odisha also there is a tradition of making Malpua on Holi. Here Malpua is called Ampua. To make this also, rice flour is used instead of flour. First of all, add water to the jaggery and melt it. Now mix rice flour, coconut, cardamom powder, fennel, melted jaggery and milk in a vessel and make a smooth batter. Heat oil in a pan and prepare small sized Malpuas in it. Malpuas of Odisha are less sweet, which taste very tasty.
